Easy Green Pea Hummus with Cordyceps Mushroom

Ingredients:

  • 1/2 cup frozen green peas
  • 1/2 tsp Cordyceps Mushroom extract powder
  • 1 can chickpeas
  • 3 garlic cloves
  • 2 tbsp olive oil divided
  • Juice from 1 lemon
  • 1 tbsp Lime juice
  • 2 shallots finely chopped
  • 1/2 cup cilantro leaves
  • 1 tsp jalapeño minced (optional)
  • 1 1/2 tsp fresh ginger grated
  • 1/4 cup coconut yoghurt
  • 2 tbsp green curry sauce
  • Salt and pepper to taste

Directions:

  1. Place green peas in hot water for 1.5 minutes
  2. Place a medium skillet under medium-low heat add 1 tbsp of olive oil. Once heated add your shallots, ginger, and garlic. Sauté until softened and slightly brown. Transfer to a small bowl and let cool
  3. Add all remaining ingredients to your blender along with the peas and shallot mixture. Blend until thoroughly mixed.
  4. Serve with a side of cucumbers and carrots or your favourite pita chips. Enjoy your delicious Green pea hummus with Cordyceps Mushroom!
