
Easy Green Pea Hummus with Cordyceps Mushroom (Vegan, Gluten Free)
Ingredients:
- 1/2 cup frozen green peas
- 1/2 tsp Cordyceps Mushroom extract powder
- 1 can chickpeas
- 3 garlic cloves
- 2 tbsp olive oil divided
- Juice from 1 lemon
- 1 tbsp Lime juice
- 2 shallots finely chopped
- 1/2 cup cilantro leaves
- 1 tsp jalapeño minced (optional)
- 1 1/2 tsp fresh ginger grated
- 1/4 cup coconut yoghurt
- 2 tbsp green curry sauce
- Salt and pepper to taste
Directions:
- Place green peas in hot water for 1.5 minutes
- Place a medium skillet under medium-low heat add 1 tbsp of olive oil. Once heated add your shallots, ginger, and garlic. Sauté until softened and slightly brown. Transfer to a small bowl and let cool
- Add all remaining ingredients to your blender along with the peas and shallot mixture. Blend until thoroughly mixed.
- Serve with a side of cucumbers and carrots or your favourite pita chips. Enjoy your delicious Green pea hummus with Cordyceps Mushroom!
