
Chocolate-Beet Adaptogen Energy Balls with Chaga Mushroom (Vegan, Gluten Free, Paleo)
Ingredients:
- 1 1/2 cups of pitted dates
- 1/2 cup raw almonds
- 1/3 cup raw cacao powder
- 2 tbsp mushroom beetroot latte
- 1/3 cup shredded coconut
- 2 tbsp coconut oil
- 2-3 tbsp maple syrup (depending on desired sweetness)
- 1 tsp cinnamon
Directions:
- Add almonds to your blender and grind semi-fine
- Add all additional ingredients (except for the shredded coconut) and thoroughly blend until mixture has a doughy consistency
- Place coconut shreds on a flat plate
- Scoop out tbsp size portions of the mixture and begin rolling into balls with your palms
- Roll balls over the coconut shreds
- Enjoy your mushroom beet latte chocolate adaptogen balls immediately or place in fridge and enjoy later!
