Reishi Mushroom Chocolate Heart Brownies with Goji Berries (Vegan, Paleo, Gluten Free)
Ingredients:
- 1 tsp Reishi Mushroom extract powder
- 2 tbsp cacao powder
- 2 tbsp goji berries (or more if desired)
- 2/3 cup blanched almond flour
- 2/3 cup semi-sweet or dark chocolate chips (or dairy-free chocolate chips)
- 1 cup Coconut sugar
- 1/4 tsp cinnamon
- 5 tbsp coconut oil
- 1/4 tsp of sea salt
- 1 tsp vanilla extract or vanilla bean
- 2 eggs (vegans: sub for chia seed or flaxseed eggs)
- 1/2 tsp baking powder
Directions:
- Preheat oven to 350 degrees or 180 celsius
- Using coconut spray evenly spray your baking dish (preferably 8x8 or 8x9) including all corners
- In a small pan, under low heat, melt oil and chocolate chips until smooth. Remove from heat and set aside
- In a mixing bowl, add eggs and sugar and whisk together until completely smooth
- In a larger mixing bowl whisk together cacao powder, almond flour, salt and baking soda
- Take your egg/sugar mixture and slowly whisk into the chocolate pan. Add vanilla and continue whisking until smooth
- Add dry ingredients and continue whisking until properly combined
- Lastly, add in goji berries and lightly mix in
- Evenly pour brownie batter into your baking dish
- Place in oven and bake for about 20 minutes making sure your edges are set but the middle is still soft and slightly underdone
- Remove from oven and let cool about 20-30 minutes before slicing
