Wild Mushroom & Sweet Potato Immune Defence Tacos (Vegan, Paleo, Grain Free)

Wild Mushrooms and Sweet Potato Tacos with Mushroom Immunity Blend (Vegan, Gluten Free, Paleo, Grain Free)


  • 2 packages of your favourite mushrooms (roughly 200 grams). We used bunapi and oyster mushrooms here.
  • 1 sweet potato peeled and cubed
  • 1 cup red cabbage chopped
  • 1 mango cubed
  • 1 Tb finely chopped red onion
  • 1/2 an heirloom tomato chopped
  • 1/2 jalapeño seeded and chopped
  • 4-6 of your favourite grain-free tortillas (we like Siete chickpea flour tortillas)
  • A handful of cilantro (for garnish)
  • 2 chopped radish (for garnish)

For seasoning:

  • 6 tablespoons chilli powder
  • 4 tablespoons cumin
  • 2 tablespoon smoked paprika
  • 2 tsp Mushroom Immunity 8 Extract Blend
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 1 tsp sea salt (or more if desired)

For Taco Sauce:


  1. Preheat oven to 200 degrees Celsius (400 F).
  2. Place cubed sweet potato along with 1 tablespoon of your favourite cooking oil on a baking sheet and bake about 20-30 min depending on the size of cubes.
  3. While the sweet potato is baking toss cut mango, jalapeño, tomato, and red onion into a bowl and set aside.
  4. Scoop 2 tablespoons of taco seasoning into a large mixing bowl along with 1 tablespoon of oil and toss mushrooms in it until lightly coated (adding more oil or seasoning if desired). Set aside the remainder of taco season and store in an airtight container (sprinkle some on your veggies or eggs etc anytime you want an extra flavorful kick!).
  5. In a mixing bowl whisk together all ingredients for taco sauce and put into an airtight jar (sauce can be kept in the fridge for up to one week).
  6. In a large pan under low heat melt 1 tablespoon of coconut oil (or grass-fed butter or ghee).
  7. Add mushrooms and cook for about 5-10 min under medium heat tossing every 2 min until you reach desired consistency.
  8. Heat tortillas and add 1 scoop of mushrooms and sweet potato per taco.
  9. Garnish with chopped cabbage, mango salsa, and cilantro.
  10. Top off each taco with delicious creamy citrus Mushroom Immunity sauce and enjoy!
