Vegan Cauliflower Buffalo Wings with Maitake Mushroom (Vegan, Gluten Free, Paleo)
Ingredients:
For the Cauliflower wings:
- 1 medium or large head of cauliflower
- 3/4 cup coconut flour
- 1 cup water
- 1 Tb garlic powder
- 1/4 tsp black pepper
- 1/4 tsp sea salt (or to taste)
For the sauce:
- 1 cup vinegar-based hot pepper sauce
- 1 Tb coconut oil
- 1 tsp Maitake Mushroom extract powder
Directions:
- Preheat oven to 450 degrees or 230 Celsius.
- Layer a large baking sheet with parchment paper.
- Wash and cut cauliflower into bite-size pieces.
- In a large bowl add coconut flour, water, garlic powder, pepper, and salt. Whisk ingredients together well.
- In batches, toss the cauliflower in the batter until fully coated, tapping off any excess batter.
- Line cauliflower evenly on a baking sheet.
- Bake cauliflower for 15 minutes.
- While cauliflower is baking prepare hot sauce by first melting vegan butter or oil in a small pot then add sauce and Maitake Mushroom. Thoroughly whisk ingredients together.
- Once the sauce is starting to boil remove from heat and transfer to a large mixing bowl.
- Remove cauliflower tray from oven and toss wings in buffalo sauce using tongs.
- Place cauliflower back on the tray and bake for an additional 15 minutes or until golden brown.
- Remove your Vegan Buffalo Cauliflower Wings with Maitake Mushroom from oven and serve immediately with your favourite vegan ranch or dipping sauce, cut carrots and celery. Enjoy!
