Pearl Beauty Pancakes with Schizandra Berry Compote (Gluten Free, Paleo)Ingredients:1 cup Bobs Red Mill Grain-Free Paleo pancake mix (or your favourite gluten-free mix)2 eggs1/4 cup of your favourite milk1 Tb coconut oil, melted1 tsp Pearl powder1/4 tsp cinnamonNote: These ingredients may slightly vary depending on what brand of pancake mix you use.For the compote:2 cups strawberries1 cup raspberries3 Tb orange juice (or water)1 cinnamon stick (optional)1/4 tsp Schizandra berry product1/2 tsp maple syrup (optional)1/4 tsp cinnamonDirections:Start by adding all compote ingredients into a saucepan under medium heat.Bring to a boil. Reduce heat to simmer and cook about 10-15 minutes.While compote is simmering whisk together pancake ingredients until the batter is smooth.Turn off compote and remove from heat. Transfer to a jar or bowl and let cool.Coat a large griddle or skillet with coconut spray or a dollop of coconut oil under medium-low heat.Use a ladle to scoop about 1/4 cup of batter onto your griddle or skillet.Flip pancakes when they are golden brown on top and have started to bubble.Top off each pearl beauty pancake with as much Schizandra very berry compote as desired.
