
Pearl Beauty Pancakes with Schizandra Berry Compote (Gluten Free, Paleo)
Ingredients:
- 1 cup Bobs Red Mill Grain-Free Paleo pancake mix (or your favourite gluten-free mix)
- 2 eggs
- 1/4 cup of your favourite milk
- 1 Tbs coconut oil, melted
- 1 tsp Pearl powder
- 1/4 tsp cinnamon
Note: These ingredients may slightly vary depending on what brand of pancake mix you use.
For the compote:
- 2 cups strawberries
- 1 cup raspberries
- 3 Tb orange juice (or water)
- 1 cinnamon stick (optional)
- 1/4 tsp Schizandra berry product
- 1/2 tsp maple syrup (optional)
- 1/4 tsp cinnamon
Directions:
- Start by adding all compote ingredients into a saucepan under medium heat.
- Bring to a boil. Reduce heat to simmer and cook about 10-15 minutes.
- While compote is simmering whisk together pancake ingredients until the batter is smooth.
- Turn off compote and remove from heat. Transfer to a jar or bowl and let cool.
- Coat a large griddle or skillet with coconut spray or a dollop of coconut oil under medium-low heat.
- Use a ladle to scoop about 1/4 cup of batter onto your griddle or skillet.
- Flip pancakes when they are golden brown on top and have started to bubble.
- Top off each pearl beauty pancake with as much Schizandra very berry compote as desired. Enjoy!
