
Classic Coconut Anzac Biscuits (Cookies) with Medicinal Mushrooms (Vegan, Gluten Free)
Ingredients:
- 1/2 cup gluten free oats (or regular oats)
- 1/2 cup spelt flour
- 1 tsp Teelixir Mushroom Immunity 8 Extract Blend
- 1/4 tsp cinnamon
- 1/2 cup shredded coconut
- 1/3 cup coconut oil (or butter)
- 1 tbsp maple syrup
- 1/2 tsp baking soda
- 2 tbsp boiling water
Directions:
- Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper and set aside
- In a large bowl add the oats, shredded coconut, spelt flour, coconut sugar, Immune Defence mushroom blend, cinnamon and combine well.
- In a small saucepan over low heat melt the coconut oil and maple syrup. Slowly add the boiling water and baking soda and lightly whisk together. Remove from heat
- Pour the wet mixture over the dry mixture and combine using a spatula
- Take a heaping tbsp sized amount of the mixture, roll into a ball and place it on the baking sheet making sure to leave enough room in between each cookie as they tend to spread out while baking
- Place baking sheet in the oven and cook for 12-14 min. Let cool down for 5-10 minutes before serving
