Preheat oven to 350 degrees Fahrenheit or 177 celsius. Line a baking sheet with parchment paper and set aside
Combine the bananas and peanut butter into a large mixing bowl and mash ingredients together well
Add the Tremella mushroom extract powder and gluten-free oats in and mix until thoroughly combined
Measure 1 tbsp of batter and form a ball using your palms then place on your baking sheet and press into the centre using the back of the measuring spoon to form an indent. Repeat until you have about 8-10 cookies
Bake for 15 minutes or until slightly golden around the edges. Remove from oven and scoop 1/4 tsp of jelly onto each cookie
