PB & J Oatmeal Cookies Recipe with Tremella Mushroom

PB & J peanut butter and jelly jam Oatmeal Cookies recipe with He Shou Wu prepared root and Tremella fuciformis Mushroom medicinal superfood extract powder Vegan Gluten Free paleo keto friendly easy simple delicious recipes

PB & J Oatmeal Cookies with Tremella Mushroom (Vegan, Gluten Free)

Ingredients:

  • 2 ripe bananas mashed
  • 2 tbsp organic peanut butter (smooth or chunky)
  • 1 cup Gluten-free quick oats (we used Bob's red mill brand)
  • 1/2 Tremella Mushroom extract powder
  • 2/3 tsp of your favourite jelly (jam)
  • 1/2 tsp maple syrup (optional)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit or 177 celsius. Line a baking sheet with parchment paper and set aside
  2. Combine the bananas and peanut butter into a large mixing bowl and mash ingredients together well
  3. Add the Tremella mushroom extract powder and gluten-free oats in and mix until thoroughly combined
  4. Measure 1 tbsp of batter and form a ball using your palms then place on your baking sheet and press into the centre using the back of the measuring spoon to form an indent. Repeat until you have about 8-10 cookies
  5. Bake for 15 minutes or until slightly golden around the edges. Remove from oven and scoop 1/4 tsp of jelly onto each cookie
  6. Enjoy your delicious PB & J oatmeal cookies with Tremella mushroom!
